Items needed: 1 can tuna, 1 egg, 1/3 cup chickpea breadcrumbs (I use Whatusee Foods; but you can use regular breadcrumbs too!), 1 tsp parsley, 1 tbsp garlic salt, 1 tsp paprika, sprinkle of black pepper. (Yeilds 2 patties)
1. Drain tuna & mash with a fork to break up big chunks.
2. mix in all ingredients & form into two patties. (If I have time, sometimes I'll set the patties in the freezer for a bit so that they can harden some -- makes cooking easier!)
3. Heat oil in a skillet (I use Chosen Foods Avocado Oil) & sear patties on both sides until crispy (about 2-3 min).
I used to totally not be a tuna girl, but I swear, this tuna burger recipe is an easy transition into eating tuna! This is such a staple quick dinner in our house. (& did I mention CHEAP). I paired it with quinoa, sweet potatoes, and zucchini & drizzled with my spicy roasted red pepper sauce or you can pair it with a salad & hassleback sweet potatoes!
