THAI PEANUT CRUNCH SALAD
Items needed: Trader Joe's Cruciferous Crunch Salad Mix, Trader Joe's Broccoli Slaw Mix, shredded carrots, red bell pepper thinly sliced. *If there isn't a Trader Joe's near you, you can cut up a bell pepper, cabbage, and greens of your choice.
For the sauce: 3 tbsp Honey Peanut Butter (I use Homeplate Honey Peanut Butter), 2 tbsp coconut aminos, 1 tbsp Redboat Fish Sauce (also purchased at Trader Joe's), 1 inch chunk of fresh ginger, 1/2 tbsp sesame oil, 1 tbsp warm water, sprinkle of sesame seeds.
1. Mix the sauce items together in a food processor or blender.
2. Top your salad mixture with the Thai Peanut sauce and mix thoroughly.
3. Top with some peanuts or protein! This salad is great with chicken!
