SWEET POTATO TURKEY POPPERS

WHAT YOU'LL NEED:
1 lb ground turkey (I use 85% lean)
1 large sweet potato (cooked -- wet your sweet potato, wrap in a damp paper towel, and microwave for 6 minutes...discard the skin after cooking)
1/4 cup breadcrumbs (can sub for almond flour if GF)
1 egg
1 tbsp paprika
1 tbsp garlic powder
1/4 cup chopped chives or green onions finely chopped
2 tsp salt
1 tsp pepper
HOW TO MAKE EM:
1. combine all ingredients in a large bowl and mix with a fork until well combined.
2. in a large skillet, heat 4 tbsp avocado oil over medium heat.
3. form your turkey mixture into nuggets (about 2-3 tbsp of mixture per nugget) and cook on medium-high heat on the skillet for 3-5 minutes per side, until golden brown and crispy and cooked throughout.
Serve with fresh parsley and ketchup, and you're good to go! Adult chicken nuggets for the win!
