PLANTAIN CHIP NACHOS

This was SO EASY, and barely requires any instructions, but here goes! This made two servings, so feel free to half it if you're eating for one! 

Items needed: 1 bag of Trader Joe's salted plantain chips, 1/2 pound ground meat (I used ground pork, but you can use turkey, chicken, or whatever meat you prefer!), 1 tsps paprika, 1 tsp garlic powder, 1 roma tomato, fresh green onions, 1 green bell pepper, 1/2 cup chopped white onion, 3 tbsp Whole 30 mayo (Primal Kitchen Foods Avocado Oil Mayo), 1 tbsp siracha sauce. 

1. Sautee onions and green bell peppers until browned in some avocado oil. 
2. Add meat and sautee until browned. Add in paprika, garlic powder, salt, & pepper. (if using a drier meat like lean ground turkey or chicken, add 1 tbsp cumin & chili powder and a splash of broth to make it juicier & more flavorful!)
3. Mix mayo & siracha sauce with a tablespoon of avocado oil and a little pinch of salt in a food processor. 
4. Assemble your nachos! Add plantain chips to a big plate/bowl, add meat mixture, chopped roma tomato, green onions, and drizzle your sauce! 

* We didn't use cheese because we didn't have any, but if you want cheese, I would assemble your nachos on a baking sheet and broil your cheesy nachos for 5-10 minutes until cheese is melted!
