ONE PAN LEMON CHICKEN ARTICHOKE SKILLET
juice of one lemon
3 garlic cloves (minced)
1 tsp pepper
1.5 tsp salt
1 tbsp unsalted melted butter OR 1 tbsp olive oil
14oz can artichokes
1 lb chicken breasts (about 4)
2-3 tbsp capers
1. In a small bowl, mix together lemon juice, garlic, pepper, salt, butter/olive oil.
2. Drain can of artichokes and place on a cast iron skillet with chicken.
3. Pour your seasoning mixture all over the canned artichokes and chicken on the skillet.
4. Sear the chicken and artichokes for about 15 minutes, flipping throughout, then bake in the cast iron at 400F for 7ish minutes or until chicken reaches internal temperature of 165F.
I topped mine with capers and sliced lemons and ate it over a bed of massaged kale. Enjoy!
