OATMEAL PEANUT BUTTER CHOCOLATE CHIP COOKIES
These are so good! They're not too sweet, and perfect for a clean dessert throughout your week!
Items needed: 2 cups quick oats, 1.5 tsp baking powder, 2 tsp cinnamon, 1/2 tsp salt, 2 eggs, 1/3 cup honey, 1 tbsp coconut oil, 1 tsp vanilla, as many chocolate chips as you want, and 1/2 cup nut butter of choice (I love HomePlate Honey Peanut Butter).
1. Pulse oats, baking powder, cinnamon, and salt in a blender or food processor.
2. Transfer your flour mixture to a bowl and add eggs, honey, coconut oil, vanilla, and nut butter.
3. Gently fold in as many chocolate chips as you like.
4. Scoop into ~12 cookies, squish down dough a little bit, and bake at 350 for 12-15 minutes.
