INSTANT POT LASAGNA SOUP
This is a quick soup recipe for cold cozy weather to throw together in the morning & eat as soon as you get home from work! Enjoy!
Makes ~4 servings
Items needed: 2 cups pasta of choice, 16 oz veggie stock, 1 6oz can tomato paste, 1/2 tsp pepper, 1 tsp salt, 1/2 tsp oregano, 1/2 tsp garlic powder, 1/4 c fresh chopped basil, 1 cup ricotta, 1 lb organic lean ground beef.
1. In your Instant Pot/Slow Cooker, add the veggie stock, tomato paste, pepper, salt, oregano, garlic, basil, 1 lb organic lean ground beef (cooked). Cook on low for 6-8 hours.
2. Once your soup is cooked, boil 2 cups of pasta in a pot.
3. In a separate bowl, mix ricotta with 1/2 tsp salt & 1/2 tsp pepper and 1 tsp finely chopped basil.
4. Assemble your bowl! Add pasta to your bowl, then ladle your soup on top! Add a dollop of your ricotta mixture on top & ENJOY!!!!
