SKINNY GREEN CHILE CHICKEN ENCHILADAS

SO. DANG. GOOD.
SO TASTY.
SO EASY.
Items needed: 3 chicken breasts (about 1 lb chicken), 1 cup light sour cream, 2 garlic cloves, 1 cup salsa verde (I like Trader Joe's), one can green chiles, pinch of salt, 1 tsp cumin, 10 corn tortillas, 1/2 thinly sliced white onion.
1. Cook & shred 3 chicken breasts. (I use the Instant Pot to do this quicker; OR you can buy pre-shredded chicken)
2. Blend following ingredients in food processor: 1 cup light sour cream, 2 garlic cloves, 1/2 cup salsa verde, 1 can green chiles, pinch of salt, 1 tsp cumin.
3. Mix sauce with shredded chicken & half of a thinly sliced white onion. (I do this in a bowl and scoop out the mixture into the tortillas)
4. Put sauce & chicken mixture into 10 corn tortillas.
5. Pour another 1/2 cup of salsa verde on top with cheese of choice (I like monterey).
6. Bake at 400 for 20 min! Enjoy!
