GINGERBREAD COOKIES
Okay I think these are possibly the best thing I've ever made. They taste like Christmas, without all of the sugar.
Ingredients:
1 cup almond flour, 1/4 cup coconut flour, 3/4 cup coconut sugar (can substitute brown sugar if you aren't doing paleo!), 1/4 cup coconut oil, 1 egg, 1 tsp vanilla, 1 tsp baking soda, 1/4 tsp salt, 1/4 cup 100% maple syrup, 1 1/2 tsp cinnamon, 1 1/2 tsp ground ginger, 1/2 tsp ground cloves, 1/4 tsp ground nutmeg.
1. Mix together all dry ingredients. (almond flour, coconut flour, salt, sugar, baking soda, cinnamon, ginger, cloves, & nutmeg)
2. Mix together wet ingredients. (coconut oil, egg, vanilla, maple syrup)
3. Gently mix together dry & wet ingredients.
4. Scoop out 12-14 cookies and cook at 350 degrees for 12 minutes.
5. Try not to eat all cookies in one sitting.
