STUPID-EASY HERB FLATBREAD
**there's a how-to video posted on instagram of step-by step instructions ... I know homemade bread can feel daunting, but I promise you can do this!
ITEMS NEEDED:
2 3/4 cup white all purpose flour
1 tbsp olive oil (& more for cooking)
1 packet of rapid rise yeast (1/4 oz) *you can also use traditional yeast, but recipe will take longer.
1/4 tsp white sugar
2 cloves minced garlic
1 tbsp herbs of choice (I used rosemary, but oregano would be good too!)
1 1/4 cup warm water
1 tsp salt
INSTRUCTIONS:
1. Mix together dry ingredients in a bowl: flour, yeast, sugar, garlic, herbs, salt
2. Make a pocket in the middle of your flour and pour half of your water and all of your olive oil into it. Mix it into the flour with your hands until its crumbly, then add the rest of your water. Knead bread for ~3-5 minutes until dough is no longer super sticky.
3. Form dough into a ball and place back inside the bowl. Cover with a towel, set on your counter, and let dough rise for an hour at least (or until dough has doubled in size). *If you're using regular yeast, let it rise overnight.
4. Flour your surface and dump out the risen dough onto the surface. Knead for 1 minute and shape back into a ball.
5. Using a knife or a pastry cutter, cut your dough into 8 even pieces. I did this by cutting it like a pizza (vertically, horizontally, then two diagonals).
6. Roll each piece into 8 small balls. Flatten each ball out with a roller until each piece is about 1/8 inch thick. You can use your fingers to stretch the ends out too! They should be around 8" in diameter in a circle shape.
7. Drizzle about 1 tbsp olive oil onto a cast iron skillet or regular skillet. Once skillet is hot, carefully place flatbread on the skillet. Once you see large bubbles/pockets of air, flip your flatbread over and cook the other side. This should take around 2-3 minutes per side! Take your flatbread off the heat once you see dark golden brown spots on both sides. Drizzle more olive oil in between each flatbread.
