BUFFALO CHICKEN STUFFED ZUCCHINIS

Yeilds 3-4 servings.

Items needed: 4 zucchinis, 2 cups shredded chicken, 1/4 cup ghee or butter, 1/2 cup buffalo sauce (I use Franks Red Hot), 1 tsp garlic powder, 1 tsp salt & pepper, green onions to taste. If you want it a little creamier add 1/4 cup of clean mayo like Primal Kitchen Foods Avocado Oil Mayo. 

1. Cut 4 zucchinis lengthwise and scoop out the insides. Flip over, drizzle with oil, and bake at 350 for 10 minutes. 
2. Mix together your chicken, ghee, buffalo sauce, garlic, salt, pepper, & green onions (& mayo if you'd like!). 
3. Carefully remove zucchinis from the oven and stuff them with your mixture. 
4. I added some feta on top and baked for another 8 minutes or so!
