BREAKFAST SKILLET WITH CREAMY SPICY SALSA

This is SO SIMPLE. I love when I only need to use one pot to make a super tasty meal. You can eat it for dinner or as a quick weekend breakfast with some tortillas! The creamy spicy salsa is an amazing pair with the sweet potatoes.
Items needed: 1 sweet potato, 1/2 white onion, 1/2 lb ground turkey, 1 tbsp oil (I use Chosen Foods Avocado Oil), cast iron skillet, 1 tbsp cajun seasoning (I get mine from World Market), 1 tbsp garlic salt, 2 eggs, 1/2 avocado, 1 bell pepper.
1. Sautee thinly diced sweet potato, bell pepper, & onion in skillet with oil. Once well cooked, add in ground turkey and mix with cajun seasoning and garlic salt until cooked throughout.
2. Make pockets for your eggs and crack eggs onto skillet. Broil on high for 8 minutes.
3. While eggs cook, mix up your Spicy Creamy Salsa.
4. Drizzle on top, add avocados & enjoy!
